    No, I think it is sufficient to be able to set it for the whole project

    Would you want to have a different invoice template for invoices raised against different stages/sub-projects of the project (eg Stage 1 has template A and stage 3 has template B) ?

    Not sure if you are aware, but the invoice template can be set for the project as a whole under Budget & Fee > Settings
